Stamps or points
A venue runs on stamps or on points, never both. Stamps count the things people buy: three coffees in one go is three stamps. Points count the money they spend. Choose stamps if most of your sales are about the same size, points if your prices vary a lot.
Your loyalty mode is the first real decision in setup, and it is the one that determines whether the programme makes or loses money.

Choosing
The question to ask is whether most of your sales are about the same size.
In a cafe, nearly every sale is a coffee and maybe something small. Stamps are the right answer. They are much easier to explain, and because everyone is buying much the same thing, everyone gets much the same deal.
Now say you sell $4 coffees and $28 breakfasts. If a stamp is for a coffee, the breakfast customers earn nothing at all. If a stamp is for any sale, the $28 breakfast earns what the $4 coffee earns. Either way your biggest spenders get your worst deal. Points solve it, because they follow the money.
Being easy to explain is worth a lot
Points are fairer. Stamps spread faster. A customer who can explain your programme in one sentence, and get it right, is doing advertising you are not paying for. If the choice is close, take the simpler one.

No. You pick one or the other.
Can I switch later?
Yes, but treat it as starting again rather than changing a setting. People will have built up stamps or points under the old rules and they will notice.
